Jérôme Lefèvre, an organic winemaker near Château-Thierry, is at the head of a real Conspiracy. With his group of friends, he set up his distillery in a former 19th-century factory with the desire to shake things up. Their organic, winemaking spirits blend grape varieties from the Champagne region, fruits, cereals, and plants, like this gin made by macerating grapes from the Les Chapelles plot in Saulchery and distilled in a small bain-marie still. Very indulgent with notes of red fruit, it recalls the aroma of Pinot Noir.

An uncompromising style

 

GASPARD

Nose. Marked by juniper, the nose releases notes of straw and sweet spices that give it a very slight smoky side.

Palate. Licorice takes its place with vegetal notes as well, diffusing flavors of gentian and iris.

Finish. A fruity note closes the tasting with aromas of Charentais melon. Comment. Bucking the trend for gins heavily influenced by citrus fruits, this spirit adopts an uncompromising style.

DIDIER

Nose. Marked by spices like cinnamon and cardamom, supported by rooty notes, the nose discreetly reveals juniper and orange zest. Palate. More present on the attack, the juniper brings a nice freshness even if it is quickly overtaken by spices and a herbaceous note reminiscent of tea.

Finish. The finish is expressed through volume rather than length, remaining aromatically faithful to the spices of the nose.
